Happy Friday! I’ve got three more Valentine’s Day recipes for you guys - and they’re all small batch & delicious, of course! ☺︎
strawberry shortcake cookies

These are *new* on the blog this week and they’re simply perfect. From the title you can probably guess that I’m going for a strawberry shortcake in cookie form, and these are that. Although they’re not made with a crumbly cookie base, they’re made with a super soft, melt-in-your-mouth brown sugar cookie that’s loaded with orange zest. And then, they’re topped off with a vanilla whipped cream that’s flavored & stabilized with a little instant vanilla pudding. Aaaand that all gets topped off with a nice spoonful of macerated fresh strawberries. They’re sweet - but also fresh & not too heavy - and of course, they’re delicious.
chocolate raspberry cupcakes

These got a huge update on the blog including a picture update, cake update, and frosting update. I updated the chocolate cupcake part to better match my standard small batch chocolate cupcakes which I’ve perfected (in my eyes, and tastebuds) at this moment in time. I also changed the frosting to a raspberry cream cheese buttercream rather than just a raspberry buttercream, because I think that the cream cheese pairs much better with the raspberry & chocolate flavors. And for the picture update - I of course had to photograph these in the sun.
red velvet cheesecake brownies

These only got a simple picture update on the blog but I must share them here today because they’re truly perfect two times out of the year: for Valentine’s Day and Christmas.
These are my small batch red velvet cheesecake brownies (a mouthful, I know.) They’re made in a loaf pan with a super thick & fudgy red velvet brownie base, and a thick layer of rich, creamy, and slightly tangy vanilla cheesecake gets baked on top of them. They’re super delicious and have the same sweetness & tanginess that you get out of a regular red velvet cake.
.aaand that’s all for this week! Thank you so much for reading and following along!
happy baking!
