single serve s’mores cookie

It’s getting warmer outside which means it’s time for allll the s’mores desserts. I’m not the biggest fan of having an actual s’mores (sorry), but I am a huge fan of s’mores in other desserts. This is my single serve s’mores cookie, which is exactly like my single serve chocolate chip cookie but filled with all your delish s’mores flavors.

We’ve got chocolate, marshmallow creme, teddy grahams (which are acting as our graham crackers), and a giant toasted marshmallow on top. They’re of course made with brown butter for some extra toasty flavor, and they just so happen to be eggless, so there’s no need to worry about what to do with leftover egg.

This just got a little picture update on the blog since it’s getting warmer and warmer, making it the perfect time to enjoy this cake. It’s a super moist lemon vanilla sheet cake that’s loaded with blueberries, topped with a mascarpone whipped cream and swirled with a sweet & tart blueberry curd.
