Single Serve Carrot Cake Cookie

It’s (almost) spring which means it is carrot cake szn. I already have a single serve chocolate chip cookie, but I figured it was time for another version of that - which brings us to this single serve carrot cake cookie. It all comes together in one bowl (and one saucepan.) We start by browning the butter, and then we’ll cook the carrots and pecans in that same saucepan to remove some of the moisture from the carrots and to toast the pecans. At the end, you get a super soft, non-cakey carrot cake cookie that’s filled with notes of brown butter, toasty pecans, and a hint of cinnamon.
