raspberry coconut cake


This recipe is new on the blog this week and it’s the perfect springy / summery cake. It’s made with two layers of super moist and fluffy coconut cake that’s packed with coconut flavor thanks to sweetened coconut flakes, coconut milk and coconut extract, and then it’s filled with a homemade raspberry jam that’s perfectly tart and coated in a cream cheese frosting and more sweetened coconut flakes. It’s perfectly light, refreshing, and comes together super easily. You could also easily replace the raspberry jam with blackberry, blueberry, strawberry, or whichever fruit jam your heart desires at the moment.

These got a little picture update on the blog. They’re essentially chocolate chip banana bread in cookie form. The recipe itself is eggless (but you’d never know), using banana to both perfectly replace the egg and add in that delish banana bread flavor. They’re also made with oats, cinnamon, and a ton of chocolate - and they have crisp edges with soft and chewy centers. They’re super delish and the perfect way to use up that last banana going ‘bad’ on your counter.
