Hello hello! ☺︎ It’s spring and almost Easter - and whether you celebrate or not I’m sure there’s a lot of you out there who don’t care for carrot cake but still want something festive and delish, which is exactly why I made this pineapple upside down cake. It’s small batch (of course) so all you need is a loaf pan, it’s made with a super moist and buttery vanilla cake, is topped with your classic brown sugar, butter & pineapple topping, aaaand I don’t care for the maraschino cherries in my cake so they aren’t here, but you can add them if you like!
It’s also small batch, of course, being made in just a loaf pan, but if you require more cake you can always double the recipe and make it in an 8” square pan. Regardless, I highly recommend serving this warm with ice cream or a coconut whipped cream.
