no-churn blueberry pie ice cream


This is the new recipe of the week and it’s easy, delicious, and super pretty. It starts out with a vanilla mascarpone no-churn ice cream base that’s ridiculously creamy and delicious, and then we load it with a ton of homemade wild blueberry jam and pie crust crumbles. The hardest part about this recipe is waiting for it to freeze, so start it now to enjoy it in 5 hours!

These are truly the perfect no bake treat. If you’ve ever had cookie dough ice cream and wished there was 10x more cookie dough, these cookie dough ice cream sandwiches are for you. The sandwich part is made out of a super easy edible cookie dough that's loaded with mini chocolate chips, and then it’s sandwiched with a ton of vanilla ice cream. Not only is it super delicious, but this recipe is perfect because it can super easily be made gluten-free, dairy-free and/or vegan - I have notes on all that in the blog post! ☺︎
single serve cookie ice cream sandwich


This was new on the blog last week - it’s just one singular cookie ice cream sandwich. It’s made with the same delicious eggless cookie dough that we use in my other single serve cookies, except it’s split into two, half flavored with chocolate, baked up as two cookies, and sandwiched with a big ole’ scoop of vanilla ice cream (or whatever ice cream your heart desires - I think a coffee ice cream would be superb here.)
berries & cream cake


I definitely should have gotten this one sent out to you guys last week for the holiday weekend - but this cake is truly perfect for any time of the year. It’s just a simple but delicious fluffy vanilla cake that’s piled high with whipped cream and berries. You don’t even have to use strawberries & blueberries - this cake is truly just the perfect blank canvas for your favorite in-season fruits.
