happy friday! here’s what’s new (& updated) on fresh bean bakery this week -
hazelnut chocolate chip cookies


These are *new* on the blog this week! I’ve been meaning to make these ever since I made my pistachio chocolate chip cookies, because hazelnuts are one of my favorite ingredients and these are just the pistachio chocolate chip cookies, but with hazelnuts. So they’re not just your average chocolate chip cookie with a little bit of crushed hazelnuts added in to them, they’re made with my *perfect* brown butter chocolate chip cookie base, have hazelnut *flour* in them along with crushed hazelnuts, and are loaded with pools of melty chocolate.
And don’t worry about needing to buy hazelnut flour and hazelnuts, you’ll just need blanched hazelnuts to super easily make your own hazelnut flour for these!
cheesecake brownies


These got a little update on the blog this week. They originally had a shortbread crust on them buuuut I also have shortbread brownies on the blog so it just felt a little repetitive. Plus the original version was made before I realized that you can get super pretty swirls on top by placing dollops of brownie batter on top of the cheesecake and swirling it around - so the swirls were made from me aggressively trying to swirl the brownie batter on the bottom up to the top and was obviously not as pretty. They’re made with my classic perfect fudge brownie and a layer of super creamy and rich cheesecake and they’re perfect for if you can’t decide if you want one or the other.
Also a not-so-fun fact: I made these twice this week for the pictures because I dropped the entire pan of fresh-baked hot cheesecake brownies on the floor the first time I made them.

These got a *big* update on the blog. They were originally posted in 2022 and I’ve since perfected my super soft and fluffy milk bread brioche recipe - so now obviously these have been updated to use that dough! They’re also topped with a super creamy cheesecake filling and some fresh blueberries (though you could also easily use frozen blueberries) and are the perfect weekend brunch treat. I know yeast breads can seem a little intimidating but I have allll the best tips, tricks, and information you’ll need in this post and all my yeast bread posts and I promise they’re worth the work & wait.
