small batch nutella muffins
and banana pudding cookies
hello hello and happy saturday! Here’s what’s new this week -
chocolate hazelnut muffins

AKA nutella stuffed muffins - these are new on the blog this week! I haven’t put out a muffin in a while because I feel like there’s not much to be done with muffins and I feel like people don’t usually want to make muffins when they want to bake something, buuuut I was inspired to make these by the jar of chocolate hazelnut spread I had in my pantry. They’re made with a super moist and fluffy vanilla muffin base that’s loaded with mini chocolate chips, stuffed with chocolate hazelnut spread (like nutella, but I use bonne maman’s!), and they’re topped off with a brown sugar hazelnut streusel to amplify the hazelnut flavor. I recommend letting the batter rest for 30 minutes before baking for the best results, but they’re delish no matter what!
banana pudding cookies

These were new on the blog last week, but unfortunately I wasn’t able to get a newsletter out last week (better late than never?). They’re my favorite kind of dessert, which is of course any dessert that combines two desserts into one. The base is a super soft melt-in-your-mouth sugar cookie that’s topped with bananas, pudding, and nilla wafers aka banana pudding. We’re using instant pudding here to make things easier since you also have to make cookies. They’re soft, light, and the perfect cookie to help you through these cold winter months.
shortbread brownies

These got a very much needed small batch update on my blog. They used to make a 8” square pan of brownies and now they make a cute lil loaf pans worth of brownies. I also swapped in powdered sugar instead of granulated sugar to make the shortbread a little more delicate, and I changed the whipped ganache to just your standard ganache, because it’s just as delicious and it’s much less work.
happy baking!
