I don’t know how I’ve gone so long without posting a proper banana bread recipe! I have a cookie butter banana bread on my blog that’s been there almost since the beginning, but not a regular base banana bread. So here’s my version of banana bread. It’s absolutely filled with fresh blueberries, is super moist, comes together in one bowl with no mixer required, and is topped with a crunchy pistachio crust. In my opinion, a crunchy crust is *always* required for a banana bread. You could replace the pistachios with any nut that you’d like (walnuts are always a great classic pairing with banana bread), leave out the blueberries, add in chocolate chips - whatever you’d like. So if you’re looking for something to do with the sad bananas on your counter, this is just the recipe for you. Or, if you like planning ahead, add some bananas to your grocery list this weekend and they’ll probably be ready to use next weekend!

To say this cake is perfection is an understatement. Here’s the deal: she’s a 6-inch, 3-layer coconut cake. We’ve got coconut flavor from coconut milk, shredded coconut AND coconut extract because we’re serious about our coconut flavor over here. The cake itself is ridiculously light, fluffy, and moist and uses the same base as my small batch vanilla cupcakes. The frosting is a super soft and creamy vanilla bean cream cheese buttercream that we’ll dye blue to mimic a robin’s egg. This cake is perfect for if you want something Easter-y but aren’t a huge fan of carrot cake.

Aannddd here I go again with the robin’s egg recipes (you’ll also be getting robin’s egg coconut coffee cupcakes soon as well!) Here we just have a fun little macchiato that’s naturally dyed pastel blue with butterfly pea powder. It’s made with a white chocolate coconut sauce so again, if you’re a coconut fan, I think you’ll enjoy this drink right here.

And we’re on to the updated recipes of the week. Starting strong with these carrot cake cupcakes! They’re small batch (of course), made with a super moist, spiced carrot cake and topped with a rich cream cheese frosting. Decorate them with cute little carrots on top, with walnuts, or with both!

I think I need to make a book on frosted cookies because every time I make a new frosted cookie recipe I’m super excited to put it out and I love it so much. These aren’t new, but they sure are delicious. These carrot cake cookies got the slightest of updates but here’s the rundown: soft and chewy brown butter carrot cake spiced cookie, brown butter cream cheese frosting, and a ton of walnuts.
