I’ve always been obsessed with all things brioche, but lately, I’ve been non-stop baking all things brioche. In an attempt to get away from all the heavy chocolate bakes from the holidays, I’ve also been making more fruity & citrusy bakes - which loosely leads us to these blueberries and cream buns.
The inspiration for these comes from semla buns - which, don’t get me wrong, I am not trying to pass these off as semla buns. But the general, core idea of these comes from semla buns: you’ve got a brioche bun, you cut the top of it off, and fill it with deliciousness. These are made with a super fluffy brioche, filled with a ton of homemade whipped cream, and topped off with some fresh macerated blueberries. They’re the perfect *not too sweet* treat.
