Banana Pecan Upside Down Cake
plus marshmallow cupcakes, pumpkin spice sheet cake & black cocoa cake
happy friday! here’s what’s new (& updated) on fresh bean bakery this week -
NEW banana pecan upside down cake

Neewwwww on the blog this week is this banana pecan upside down cake. I don’t know about you, but I just feel like banana bakes are made for the fall weather. This cake is made with a super moist, very banana-y, slightly cinnamon-y banana cake and it’s baked on top of a maple pecan caramel sauce. When it’s done baking, you flip it over, and voila - a delicious maple pecan caramel on top of a delicious banana cake. If you’ve got some “bad” bananas, I’ve got the perfect weekend baking project for you. And if you don’t, buy some now so you can enjoy this cake towards the end of the week :)
NEW marshmallow ghost halloween cupcakes

Also new on the blog are these marshmallow cupcakes! They’re made with a super light and fluffy vanilla cupcake batter, stuffed with marshmallow fluff, and topped off with a marshmallow buttercream. And if you want to make them a little cute and festive for Halloween, you can add little faces to them.
updated pumpkin spice sheet cake

This cake just got a picture update on the blog since I’m currently obsessed with photographing everything in direct sunlight. It’s made with a super moist and flavorful brown butter pumpkin spice cake, it’s topped with a brown butter cream cheese frosting, and of course, there are little decorated pumpkins on top of it.
updated black cocoa cake

This recipe got a major update on the blog. As you guys may know, because I can’t stop doing it, I love me some 3-layer 7” cakes that you can assemble in a springform pan sooo I transformed the recipe into one of those. It’s still the same delicious & moist black cocoa cake, but a tad smaller. It’s also layered with espresso-infused ganache aaaand now it’s made with a creamy black cocoa cream cheese frosting, rather than black cocoa buttercream.
Also listen, I know the faces on the ghosts are a little nightmare-inducing and I apologize. I diluted the cocoa powder too much when making the mixture for the faces which resulted in the faces above. I think they still make sense for Halloween buuuut if you don’t want to scare anyone, be careful with making the faces if you choose to use cocoa & water to make them.
..aaand that’s all for this week! Thank you so much for reading and following along!
happy baking!
