Hello hello! ☺︎ I’m once again here with a delish brioche pastry. It’s currently apricot season and I feel like apricots don’t get enough love, which is exactly why I made these apricot cheesecake danishes. They’re made with a fluffy brioche base, filled with a rich cheesecake filling, and they’re topped with a whole half of an apricot along with some crunchy almonds. The tartness of the apricot pairs so well with the sweetness of the cheesecake filling, and overall this is just a nice, light and refreshing dessert for the summer (best enjoyed with an iced latte, of course.)
